Chicken Noodle Soup

I'm back!
Behold - super easy chicken noodle soup with warm broth and vegetables to soothe any sickly loved one, but just enough spices to keep your entire house from smelling like a boiled chicken. Not that there's anything wrong with that.


Ingredients:
4 cans (14 oz ea.) chicken broth - or the equivalent amount of chicken bouillon and water (7 cups), which is what I use
1 TBSP butter
1/2 cup chopped onion
1/2 cup chopped celery
1 c. sliced carrots
1/2 lb. cubed chicken
1 1/2 cup egg noodles - I like to use Rotini or other pasta because it's more fun (ie. Blue's Clues Macaroni)
1/2 tsp. basil
1/2 tsp. oregano
salt & pepper to taste

Instructions:

  • Melt butter in pot. Cook onion and celery in butter. 5 min.
  • Pour in broth & stir in chicken, noodles, carrots, and seasoning.
  • Bring to boil. Reduce heat and simmer 20 min.
Makes 6 servings.

This is so so good, people. I want to make some now even though I'm not sick....
p.s. There is  more broth than is shown in the picture. I forgot to take a picture of my first bowl, so this is seconds.
