Bisquick Chicken Fingers

Here it is! Recipe #1! Anything that is not made from a box is fair game for recipe sharing, so here goes.

Ingredients:
2/3 cup Bisquick mix (or generic baking mix)
1/2 cup grated Parmesan cheese
1/2 tsp. salt or garlic
1/2 tsp. paprika
3 boneless skinless chicken breasts, cut crosswise into 1/2-1" strips
1 egg, beaten
3 TBSP margarine, butter, OR cooking oil spray

To Cook:
1. Heat over to 450oF . Spray glass dish with cooking spray OR line metal dish with parchment paper/ foil.
2. Mix Bisquick, cheese, salt & paprika in a gallon-size ziploc bag.
3. Dip half the chicken strips into the egg, then place (after letting some of the egg drip off) in the bag. Seal the bag; shake to coat. Place chicken on baking dish. Repeat with remaining chicken (add more Bisquick if necessary). Drizzle butter over chicken OR spray liberally with cooking spray.
4. Bake 12 to 14 minutes, turning after 6 minutes with spatula, until no longer pink in center.

Comments:
This is incredibly easy and fast to make. It takes a little time to slice & shake the chicken, but it cooks in 15 minutes! Chicken comes out nice and moist too. Clearly not a Gluten Free meal, unless you have a GF baking mix, but it's cheap and easy!
